Vanilla Bean recipes

1. Vanilla Bean Crème Brûlée

Ingredients:

  • 2 cups heavy cream

  • 1 vanilla bean

  • 4 large egg yolks

  • 1/2 cup granulated sugar, plus extra for caramelizing

  • Pinch of salt

Instructions:

  1. Preheat the oven to 325°F (160°C). Place four ramekins in a baking dish.

  2. In a saucepan, heat the heavy cream over medium heat. Split the vanilla bean lengthwise and scrape out the seeds with the back of a knife. Add both the seeds and the scraped vanilla pod to the cream. Bring the cream to a gentle simmer, then remove from heat and let it steep for 15-20 minutes.

  3. In a separate bowl, whisk together the egg yolks, sugar, and salt until smooth and slightly pale.

  4. Gradually pour the warm vanilla-infused cream into the egg mixture, whisking continuously to combine.

  5. Strain the mixture through a fine-mesh sieve into a pouring pitcher to remove any lumps and the vanilla pod.

  6. Pour the custard evenly into the ramekins. Fill the baking dish with enough hot water to reach halfway up the sides of the ramekins, creating a water bath.

  7. Bake for 30-35 minutes or until the custard is set around the edges but still slightly jiggly in the center. Remove from the oven and let cool to room temperature.

  8. Refrigerate the crème brûlée for at least 2 hours, or overnight, to chill and set completely.

  9. Just before serving, sprinkle a thin layer of granulated sugar over the chilled custard and caramelize it with a kitchen torch until the sugar turns golden brown and crispy.

  10. Allow the sugar to cool and harden slightly before serving. Enjoy the creamy and indulgent vanilla bean crème brûlée!

  • 1/2 teaspoon pure vanilla extract or the seeds of 1/2 a vanilla bean

Instructions:

  1. In a blender, combine the frozen blueberries, milk, Greek yogurt, honey (or maple syrup), and vanilla extract (or vanilla bean seeds).

  2. Blend until smooth and creamy, ensuring the blueberries are fully blended.

  3. Taste and adjust sweetness as desired by adding more honey or maple syrup.

  4. Pour the delicious vanilla bean blueberry smoothie into glasses and serve immediately.

  5. Optionally, garnish with fresh blueberries or a sprinkle of ground vanilla bean for an extra burst of flavor. Enjoy the refreshing and nutritious goodness!

3. Vanilla Bean Infused Whipped Cream

Ingredients:

  • 1 cup heavy whipping cream

  • 1 vanilla bean

  • 2 tablespoons powdered sugar (adjust to taste)

Instructions:

  1. Chill a mixing bowl and the beaters of an electric mixer in the freezer for 10-15 minutes before starting.

  2. Split the vanilla bean lengthwise and scrape out the seeds with the back of a knife.

  3. In the chilled mixing bowl, combine the heavy cream and vanilla bean seeds. Beat the cream on low speed for about 1 minute to distribute the vanilla.

  4. Increase the mixer speed to medium-high and beat until soft peaks form. This will take a few minutes, depending on your mixer's speed.

  5. Add powdered sugar to the whipped cream and continue beating until stiff peaks form and the whipped cream is firm and velvety.
